Cryo-concentrated and barrel-aged pear brandy made from Danish Conference, William, and Grev Moltke pears.
A warm, sweet brandy with a delightful aroma of ripe pears and pure Eau de Vie. A rich flavor with hints of caramel, smoke, and vanilla settles beautifully on the palate.
Enjoy it with strong cheeses, as a digestif, or in a cocktail.

Pyrus Communis is produced using the cryo-concentration method. The pears, at their optimal ripeness, are pressed into juice and immediately frozen. The juice is then thawed outdoors at subzero temperatures, where the frost binds the water in the juice while the sugar, acid, aroma, and color drip down as a thick raw syrup. After thawing, the concentrated “pear syrup” is cold-fermented for 24 months, blended with our own distilled Eau de Vie, and finally barrel-aged for 12 months in used white wine barrels.
Cryo-concentration certainly gives us cold hands, but this technique is the core foundation of all our apple, pear, and quince wines. With this method, we can extract the aroma, achieve high sugar content, and preserve the intense acidity from the fruit in our wines.
