The Danish winter can be very changeable. In the winter of 2012-2013 for example, the weather changed constantly between frost and thaw. 

We make use of that in Vinter, a wine fermented outdoors for the entire winter.

A total of 30 varieties of organic apples were crushed and pressed in the late autumn.

Some of the pulp was returned to the wine to add complexity.

The wine is bottle-fermented, and contains 30 g. of residual sugar per litre.

Intense apple flavour, sweetness and acidity with lots of tannins and complexity.
