Pommus is a dry apple wine, and our first attempt at an actual dinner wine.
Based on tree varieties of apple: Elstar, Ingrid Marie and Jonagold.
The juice is frozen directly after being pressed. When thawed, the juice is highly concentrated, with increased levels of acidity, sweetness and not least aroma.
After the first fermentation, it is fermented again in Champagne bottles, riddled in Champagne racks and disgorged.
The final product is dry and acidic, with strong tones of apple and a pleasant bitter aftertaste. The ideal accompaniment to fish and shellfish, poultry etc.
Serve chilled

A dry and lively sparkling apple wine with long-lasting fine bubbles and a delightfully fresh apple flavour from good honest Danish apples. It says on the back label that this is the first apple wine Cold Hand Winery has produced as an actual dinner wine. And yes, its fresh, acidic bite is certainly well-suited to light (luxury) dishes.
