The base wine for this sparkling wine is produced from small black Stevnsbær cherries. To balance out the intense acid and huge amount of tannins from the cherries, the wine is blended with an apple wine and then bottled.

It is then matured in the bottle for 5 months, placed in Champagne racks and hand-turned. After 20 days in the racks, the bottle necks are frozen and the wine disgorged.

A 'transport liqueur' is added along with 20 grams of sugar per litre.

The wine is an experience in cherry, and will go with anything from cheese to riz à l'amande, cakes and desserts.
